A clear comparison of the June demo and the September Early Access scope so older videos are not mistaken for launch-build details.

What the demo includes
Steam’s demo description says the demo covers the first four progression levels, up to three rooms, six attraction types, the token/hourly-income loop, basic staff management and the cafeteria.
What Early Access expands
The Early Access store page expands that scope to 10 rooms, 28 attraction types, four token currencies, bank loans, five staff roles, deeper customization and broader food/retail systems.
Playing machines yourself
The demo page explicitly warns that players cannot play the arcade games or simulators themselves in the demo. The full-game description says the full version allows more direct interaction. This is exactly the kind of version difference that can make an old YouTube answer misleading if it is copied without a label.
What old videos cannot prove
June demo prices, exact unlock levels and balance numbers are old-build details unless rechecked after the September Early Access release. Those videos can still show mechanics, UI locations and workflow when the systems match the launch build.
